• 1 chicken roll (approximately 1 ½ kg)
• 1 GREEK at HOME cooking sauce for Roast “Lemonato”
• 1 small pumpkin
• 500g baby potatoes
• 50ml olive oil
• Salt-pepper (for the mash)
• 4 tablespoons butter
1. Preheat the oven to 180°C.
2. In a large pan with a little olive oil, sauté the chicken roll on all sides until it turns golden brown.
3. Place the pumpkin and potatoes, diced into cubes, in the baking dish. Season with salt and pepper, add olive oil, and mix.
4. Position the roll in the center and surround it with the pumpkin and potatoes. Pour the GREEK at HOME cooking sauce over it to cover everywhere.
5. Bake covered in a preheated oven at 180°C. After one hour, remove the pumpkin and potatoes and continue baking the uncovered roll for another half hour until it gets a nice color and the sauce thickens.
For the mash
In a bowl, place the potatoes and pumpkin. Add butter and mash with a fork. If needed, add salt and pepper.
Serving suggestion
Serve the roll on a plate and pour the sauce over it. In another bowl, serve it with the mash.
Tip: At the end of cooking, you can add a bit of the sauce to the mash for extra flavor.
