• 8-10 chicken drumsticks
• 1 GREEK at HOME cooking sauce for Roast “Melomeno”
• 300g sliced potatoes
• 300g sliced zucchini
• 300g sliced eggplant
• 2 sliced carrots
• 40ml olive oil (approximately 2 ½ tablespoons)
1. Preheat the oven to 180°C.
2. In a bowl, toss the chopped vegetables with olive oil and lightly salt. Mix well.
3. Score the chicken drumsticks.
4. Place the vegetables in a baking dish, add the drumsticks, and spread the COOK at HOME sauce to cover everything.
5. Cover with aluminum foil and bake for 15 minutes.
6. Uncover and continue baking for about 40 minutes. During this time, check and add water as needed.
Serving suggestion
Serve the drumsticks with the vegetables on a plate.
Tip: Add 2 coarsely chopped onions with the vegetables.
