For the lemon chicken
• 1 whole chicken, cut into portions
• 1 GREEK at HOME cooking sauce for Classic Casserole “Lemonato”
• 40ml olive oil (approximately 2 ½ tablespoons)
• 300ml water (approximately 1 cup)
For the greens
• 1kg coarsely chopped spinach
• 4 leeks, sliced
• 1 bunch of fresh spring onions, sliced
For the lemon chicken
1. Season the chicken pieces with salt and pepper and sauté them in a pot with olive oil over high heat until they turn golden brown.
2. Then, add the entire GREEK at HOME cooking sauce, about 1 cup of water (300ml), and mix well.
3. Cook covered over medium heat for about 40 minutes.
For the greens
1. Meanwhile, in a pot of boiling water, blanch the vegetables for about 1 minute and drain.
2. 20 minutes before turning off the heat, add the vegetables to the pot to boil together with the chicken, checking if additional water is needed.
Serving suggestion
Serve the dish in deep plates, hot or cold.
Tip: Sprinkle the dish with lemon zest.
